Chicken Pesto Pasta

Similiar to the pizza I have posted about before, this pasta is essentially the same thing but in a pasta form! We make this for dinner a lot and it is one of our favs.  This time, I made it with plain rigatoni pasta but often times I use a bertoli chicken & herb tortellini. And as with many things I make up, the proportions arent an exact science nor are the ingredients. I use what I have usually and some other ingredients would be good with this too, such as pepperoncinis, kalamata olives, artichokes, etc.


16 ounces Rigatoni pasta (or pasta of your choice)
1 cup Sun dried tomatoes
1-2 cups Spinach
3/4 jar Pesto sauce
1 cup Feta cheese
1/2 – 1 cup Italian cheese blend
2 cups cooked chicken

1.  Cook pasta and cut sun dried tomatoes and spinich while pasta is cooking.

2.  Drain pasta and add all ingredients.

3.  Mix well until cheese has melted and serve.

4.  Add some garlic bread and a veggie and your all set!  Fast and easy dinner and ready in about 30 minutes!!
