I am not really sure who invented these, but since Shay is the only person I know of, I will call it her creation!! She used to make her version of these ALL the time and now Matt and I make them ALL the time! They are so delicious and a very healthy dinner option and fast and simple to make. I have never measured out the ingredients when making these so the amounts listed below are just estimates.
1 lb ground turkey
2 tbs cumin
1 tbs chili powder
1 tsp oregano
1 cup oats
3/4 cup chopped cilantro
3-4 garlic cloves (one elephant garlic clove)
1/4 red onion
one jar salsa
1. Preheat oven to 450 degrees.
2. Mix all ingredients together in a bowl.
3. Shape into 2-3 in balls.
6. I usually serve them with white sticky rice and veggie. Tonight is was roasted brussel sprouts!
